One of my favorite parts of any resort getaway is discovering a restaurant that feels like a destination all its own. During a recent visit to the stunning Park Hyatt Aviara in Carlsbad, I brought along my 19-year-old son as my plus one for dinner at Pacific Point Sushi Lounge. As the two self-appointed sushi and seafood aficionados in our family, we were particularly excited to experience the eatery’s enhanced sushi program.
Perched above the coast with sweeping views of the Pacific, Pacific Point has long been known for its relaxed sophistication and fresh California flavors. Now, the restaurant is taking its culinary program to an exciting new level with the arrival of acclaimed chef William Eick and the expansion of its sushi offerings to seven nights a week.
Under the leadership of Chef Eick and Sushi Chef Meljohn Sebastian, Pacific Point’s menu embraces Japanese and Asian-inspired cuisine while showcasing the seasonal ingredients Southern California does so well. The result is a dining experience that feels both elevated and approachable, where beautifully crafted sushi and inventive small plates are complemented by ocean breezes and sunset views.

Chef Eick brings an impressive pedigree to Pacific Point. As the chef-owner of Matsu in Oceanside, he has earned recognition as one of the region’s most respected culinary talents.
His arrival further strengthens an already remarkable culinary team at Park Hyatt Aviara, which includes celebrated chef Richard Blais of Ember & Rye, Executive Pastry Chef Sylvain Piffeteau and Executive Sous Chef and Sustainability Leader Jesse Paul, who recently won the Sustainable Carlsbad Business Environmental Stewardship Award, presented by the City of Carlsbad.
While Pacific Point’s expanded sushi menu (available in the Sushi Lounge from 5 pm to 9 pm nightly) may be the headline, what truly stands out is the resort’s commitment to creating memorable culinary experiences. Every detail, from the quality of the ingredients to the artistry of the presentation, reflects a dedication to craftsmanship.
Our faves? Mine – The Orange Dragon roll felt especially inspired with the vibrant combination of crispy shrimp tempura and rich chopped salmon, elevated by silky beet-cured salmon and smoky charred beet aioli. The result is a colorful, flavor-packed roll balancing sweetness, earthiness, and ocean-fresh richness. For my son, the buttery A-5 Wagyu draped over a rich lobster-filled roll balanced with tempura asparagus and avocado took center stage. The Kampachi Sashimi delivered a beautifully balanced interplay of clean, buttery yellowtail, sweet pickled persimmon, briny tobiko, and a delicate peach vinaigrette, while smoked kombu oil and nori dust add an elegant umami finish.
