With a flexible Chef’s Menu, attentive service and a setting steps from the sand, Watertable makes dinner feel like a vacation.

There’s something about a night at the beach that makes dinner feel a little more special. Recently, my husband, Tim, and I headed to Watertable at the Hyatt Regency Huntington Beach for a date night that combined the easygoing beauty of the coast with an elevated dining experience.
Located just steps from the sand, Watertable feels distinctly Huntington Beach. The setting is stylish without being stuffy, with a relaxed coastal ambiance that makes it equally inviting for a romantic dinner, a special occasion or a leisurely evening with friends. From the welcoming service to the comfortable, sophisticated surroundings, we immediately settled into vacation mode – even though we were only a short drive from home.
One of the highlights of the evening was the Chef’s Menu, which puts a personal spin on dinner. Guests can select their preferred protein, sauce and side, creating a meal tailored to their tastes. It’s a fun approach that gives diners the freedom to build a plate that suits their mood while still showcasing the kitchen’s attention to quality and presentation.
Tim chose the 6-ounce filet, which arrived grilled to perfection, tender and beautifully prepared. He paired it with grilled asparagus and a silky white wine butter sauce – a classic combination that let the quality of the steak shine. He also enjoyed the Watertable Wedge salad, a crisp and flavorful start to the meal that offered a nice contrast to the richness of the entrée.
I began with the hamachi crudo, a beautifully presented appetizer that was fresh, delicate and full of flavor. It was the kind of dish that felt light and refreshing while still making an impression. For my entrée, I chose the salmon, which offered a satisfying balance of richness and freshness and made for a memorable main course.
Beyond the food, part of what made the evening enjoyable was the pace. The menu is complemented by a thoughtful selection of fine wines and craft cocktails, making it easy to linger over a drink, talk and simply enjoy the surroundings. Our attentive service added to the experience without ever feeling intrusive, allowing us to settle in and enjoy our time together rather than feel rushed through dinner.
There’s also something particularly appealing about dining at a resort when you aren’t actually on vacation. Watertable gave us the feeling of getting away for the evening without the hassle of packing a suitcase or traveling far. After dinner, being so close to the beach made the setting feel even more special – a reminder of how much there is to enjoy right here in our own backyard.
